The Devil You Want to Know

100% farmer-owned Thornloe Cheese Company is situated in the quaint farming village of Thornloe, Ontario- that tops its population at 123 residents. For over 70 years, Thornloe has been crafting their award-winning cheeses in small batches, using traditional techniques and only the freshest milk produced in this unique, cooler region of Northern Ontario.

Thornloe’s artisanal Devil’s Rock Creamy Blue is named for the famous granite escarpment that juts 300 feet up, in dramatic, sharp angles, out from the deep, fresh water of the beautiful Lake
Temiskaming-- found just a few miles from the dairy. Devil’s Rock Blue does provide a thrilling sharpness, just like its granite namesake, but part of the cheese’s allure is that, compared to other traditional blues, it isn’t as strong and has a much smoother, creamier texture.

Velvety soft, Devil’s Rock Creamy Blue’s complex salty to sweet and tangy flavor finishes with such a delightfully buttery richnesseven those who don’t usually delve into blue will enjoy. Aged for 6 months before being sealed in black wax, Devil’s Rock Creamy Blue makes a picturesque presentation for any cheese tray.

Devil’s Rock, the geographical marker, may have about 2,200 million years seniority over Devil’s Rock, the creamy blue cheese, but both are natural, treasured wonders of Northern Ontario’a serene beauty.

Application: Great for cheese trays! Ideal for salads, soups, sauces and even pastas!

Pairings: Devil’s Rock Creamy Blue pairs best with Chardonnay, Sherry, Syrah or dessert wines like Sauternes or sweet-flavored beers and ales.
